Genauer gesagt aus dem vorderen Bereich des Brustkorbes. Im deutschen Sprachraum auch Querrippe oder Federstück genannt. Es sind unter anderem dieselben Rippen, die man auch beim Tomahawk vorfindet. Nur sind sie eben in diesem Fall am Tomahawk belassen worden und nicht zu Short Ribs verarbeitet worden. Man unterscheidet grundsätzlich zwischen Short Ribs und Chuck Short Ribs. Die Chuck Short Ribs sind noch weiter Richtung Hals gelegen und haben mehr Fleisch auf dem Knochen, weshalb sie etwas beliebter sind.\u003C/p>\u003Cp data-block-key=\"ihv9d\">Das Short Rib besteht aus Rippenknochen und dem dazwischenliegenden, wie auch dem aufliegenden Fleisch und Fett. Alles grosszügig mit viel Bindegewebe eingepackt. Die Verteilung von aromatischem Fett ist leider nicht immer gleichmässig, weshalb einzelne Ribs etwas mehr Fett beinhalten können als andere. Man sieht das leider nicht von aussen und es ist auch nicht immer gleich - die Natur lässt grüssen.
